Nkosikhona Manqele, with a 13-year career that has seen him working at some of Kwa-Zulu Natal’s finest establishments, joined Golden Horse Casino as Executive Chef 5 years ago.
Nkosikhona’s culinary curiosity was piqued whilst working at the local supermarket after school and on weekends, pushing trolleys for customers. The store manager would frequently catch him in the bakery section and one day asked him why he was always there. He said it was because he wanted to be a chef. A few weeks later, he was promoted to bakery assistant and, on completion of his studies, enrolled at the International Hotel School.
Nkosikhona relishes the artistry involved in being a chef – from the design of the menus to the plate presentation of the food. If he could invite anyone to dine at Golden Horse Casino it would be celebrity chef Gordon Ramsay, and perhaps he will serve his idol his favorite meals at the property – Cape Malay Chicken and Prawn Curry. “After all the planning and hard work of cooking for him, there would be constructive criticism at the end that will make me a better chef. The joy of cooking for a legend like Gordon would be a huge accomplishment on my CV, because he can break or make you as a chef.”
